We’re officially into 2023 and hopefully we are all living the anti-diet life now, right? If you missed my last post about the “all or nothing” approach to food, make sure you check that out here. I could write a whole separate post about what “anti-diet” means, but that’s for another day! However, anti-diet does NOT mean that we abandon eating foods that fuel our minds and bodies, and give us a little antioxidant boost, too.
If you are looking for a warming, satisfying, and colorful soup to help get you through these cold winter weeks, this one is for you. My Golden Cauliflower Cheddar Soup (and any soup) can be made on Sunday and will keep in the fridge for a few days for easy leftovers and weeknight meals (just be sure to add a protein along side, like a cheese sandwich or salad topped with chicken). I love making soups on the weekends because I can freeze some, too, so I have a meal ready to go the next time I have a late night!
I’ve had success serving this to my toddler, believe it or not! She’s not too selective, but she definitely has her moments. Little ones who refuse to eat anything green are more likely to eat a soup like this because even though it’s packed with veggies, there is no green! (The green onions on top can easily be omitted).
This soup also contains a leading ingredient that I’ll be talking more about in next week’s blog post! Can you guess which one it is? Here’s a little hint: it helps give this soup that gorgeous golden color (and stains your kitchen utensils yellow, watch out!)
