This bright and fruity salad contains plenty of protein thanks to quinoa as its base. Quinoa is one of the only plant-based proteins that contains the nine essential amino acids that your body needs, making it a complete protein like all meats and animal products.
Here’s a tip for you: buy a fresh pomegranate and de-seed it yourself, instead of buying a cup of seeds at-the-ready. A little more time consuming, sure, but those pretty little gems will last much longer!
